This 4th of July was wonderful. Paul’s fam came down from North Texas and we watched the fireworks at Auditorium Shores while listening to Tchaikovsky’s 1812 Overture. It was a wonderful show! I made a very yummy potato salad with a red potatoes, dijon vinagrette with fresh dill and capers. Did I take pictures?? Like a dummy, no! But it was a hit. Here is the recipe I used… Careful though! I didn’t sure nearly as much vinagrette as they suggested.
I also made a Watermelon, Feta, Balsalmic Vinger reduction salad… it was mediocre. Watermelon just gets so soupy after a while… but the flavors were lovely.
Oh! I also made a vegan apple pie which I will include pics of later 
I used a Mrs. Smith’s pie crust which is listed on PETA’s “I Can’t Believe its Vegan” website. It was served with Blue Bell Homemade Vanilla so that completely negated the vegan aspect BUT hey! No one else at the shindig was vegan or completely vegetarian so… Its a start!!
I just ran across this article on EcoGeek about how friendly fireworks are… I thought it was appropriate after just celebrating the 4th! Enjoy!!
